近來在網路盛傳牛奶致癌及糖尿病的文章,文中的論點似是而非,以下是原文 :

千萬不要把牛奶、優酪乳當好東西了!
最近在網上看到一段並不新鮮的新聞:科學家終於找到牛奶致癌的確實證據。美國國家癌症研究所最近的研究發現雌性激素、雄性激素和胰島素的生長因數就是牛奶內的主要致癌物質。

加拿大的腫瘤專家建議:除了那些發展中國家的兒童和營養不良的成人,一般人並不需要喝太多牛奶。
我把該新聞轉發給一些朋友看。

我想測試一下人們對牛奶的認識,遂問:“你知道奶牛為什麼會一直產奶?”
她的回答很典型:“不常產奶能叫奶牛?”
我問:“請問你是否常產奶呢?”
“怎麼可能?”
我笑了,說:“人是只有懷了小孩才會產奶的。但牛跟人一樣都是哺乳動物。哺乳的意思就是為了哺育下一代才有乳汁。所以奶牛一直產奶只有一個原因……”
“不停地懷孕生小牛?”
她吐吐舌頭,說:“怎麼可能呢?”
我說:“確實是這樣的。但並不是所有奶牛在任何時候都能懷上孕。現代農場的解決方法是給奶牛打高劑量的荷爾蒙,讓其不自然泌乳——那段新聞所說的 “各種激素” 就是這樣來的 !

現代奶牛從兩歲開始就有九個月的時間用於懷孕。小牛出生後就會被關進小木箱並餵以毫無營養的飼料,不能動彈,以保證人們餐桌上小牛肉的精瘦嫩滑。而牛媽媽就被千方百計擠出一頭小牛所需的十倍以上的奶量。所以超過三分之一的奶牛都患有乳腺炎。

我常想起BBC製作的一個畜牧業的專輯:奶牛在鏡頭前走過,一步三跛,好像所有關節插了一根針。我想,人們即使是心如鐵石,認為那些動物如何受苦跟自己毫無關係,但希望自己能從這些病態的牛隻體內吸收到什麼營養和健康,那已非緣木求魚,而是飲鳩止渴了。當然,在商業廣告中,你會被告知飲鳩的各種好處。

許多人認為牛奶能補鈣,但眾多實驗和資料顯示,牛奶內含有鈣,但人體是很難吸收的。喝牛奶,往往還會讓體內的鈣質流失得更快。其實許多蔬菜的鈣含量比牛奶高得多,如黃花菜、蘿蔔纓、莧菜、雪裡紅、薺菜、香菜(芫荽)。不必等春暖花開,就從現在開始,讓我們更關心蔬菜和糧食吧!

牛奶的謊言在中國還要維持多久 ???
T.柯林.坎貝爾博士:美國康奈爾大學終身教授、被譽為“世界營養學界愛因斯坦。

牛奶致乳腺癌、卵巢癌、前列腺癌、大腸癌等系列癌症,近三十年來,營養學有突破性進展,關於牛奶的研究已累積大量文獻,下面我信手拈幾則關於牛奶致癌的研究報告。

2004年,瑞典卡洛林斯卡研究完成了一項牛奶與癌症的研究,研究證明,大量飲用牛奶導致婦女患卵巢癌。他們對61084名年齡在38歲至76歲的婦女跟蹤13年調查,確診愛喝牛奶的266名婦女患卵巢癌,125名尚未確診。每天飲用4次以上乳製品的婦女,卵巢癌的發病率比每天喝2次的婦女高出一倍。

哈佛大學醫學院、牛津大學和臺灣醫科大學的科學家聯合研究發現,牛奶中的激素物質IGF-I加速和加強了氯化鉀離子在細胞壁之間的交換,導致人類卵巢癌細胞的繁殖和宮頸癌細胞的加速生長。

格蘭醫學雜誌》發表一篇牛奶致女性乳腺癌的研究報告。丹麥的研究人員對117000名婦女調查發現,牛奶對乳腺癌的促發有很大影響。研究人員認為,近50年來全世界乳腺癌發病率的大幅提高與人們飲食結構中牛奶及乳製品消費增加密切相關。

以乳房外科的觀點來說, 現存並沒有任何的科學根據表示拒喝牛奶或拒吃乳製品有助於降低乳癌的機會, 即使是停經後婦女使用的賀爾蒙替代療法, 所服用的賀爾蒙藥品, 也被視為是風險度可以接受的藥品, 只是在高危險性的族群, 就是母親或姊妹是乳癌患者, 還有家族史有年輕乳癌的族群, 在規律詳細追蹤的前提下, 賀爾蒙製品的服用還是可以接受的

標題上所說的"科學家終於找到牛奶致癌證據?"可能是有些問題的,就如同研究發現雌性激素、雄性激素和胰島素的生長因數就是牛奶內的主要致癌物質。但不能說明正常人喝牛奶就會致癌,就比如說我們吃的飯含有澱粉或醣類,所以吃飯就會得糖尿病這種荒謬的推理一樣,反過來應當是說糖尿病患者應避免攝食大量醣類.同理如題來看應該是說雌性激素、雄性激素和胰島素的生長因數就是牛奶內的主要致癌物質,所以癌症患者應避免食用,這樣說就比較不會有問題。

至於文章所說是有其事實根據的,只是標題的說法"科學家終於找到牛奶致癌證據?"修正為癌症患者應避免食用乳類製品來得恰當。

專科醫生駁網上傳言‧飯後喝冷水致癌不實

 

資訊泛濫的年代,必需小心分析細心求證,不要輕率相信。


(新加坡)最近網上有傳言,勸人飯後別喝冷水,否則,冷水會導致剛剛吃下肚的油膩食物凝結在一起,使得胃腸的消化作用變慢,凝結物像爛泥般,踫到胃酸就會分解,很快被腸子吸收,附在腸壁上,不多久就會變成脂肪,導致癌症,因此,傳言叫人飯後還是喝溫水比較好。
心臟專科顧問醫生徐德祥說,不曾有一份科學報告提出上述理論。這樣的說法並不確實,人體的溫度約為37度,冷飲喝進肚子裡面,也會轉變成這個溫度,不會出現傳言里所說的,把油膩的食物“凝結在一起”。
百匯癌症中心醫藥總監洪炳添醫生受詢時說,他並不曉得醫學界有這樣的說法,指腸壁上附著脂肪會導致癌症。
脂肪難消化導致腹瀉
他指出,人體的消化系統能分解並吸收人們從食物中所吸取的脂肪。
“腸胃癌一般上會發生在有類似病史的病患身上,或是那些飲食習慣偏向高脂肪、低纖維的人身上,但和飲用冷水並沒有關系。”
洪醫生指出,如果病患有消化脂肪的困難,一般上都會產生腹瀉,或有稀疏、會浮在水面上的糞便等症狀。
“這些時不時出現的傳言,多數都沒有甚麼根據,大家不應該被傳言擾亂。”
網上傳言似是而非:
傳言︰心臟病發作時,應注意頸項的劇烈疼痛。
徐醫生︰心臟病發作,最多見的是胸部不舒服,不舒服不一定是疼痛。胸部不適可延伸到左臂,也可延至右臂、頸部和下顎,甚至延伸到肺部和胃部。有些心臟病人甚至以為是牙痛
傳言︰心臟病發作時,不一定會胸口痛。
徐醫生︰70%的心臟病發征兆是胸前不舒服,20%毫無征象,其餘10%包括惡心、盜汗和頭暈,有些甚至暈到昏倒,都屬於非典型征兆。非典型征兆多見於糖尿病病人及年老的心臟病患者。
傳言︰60%的心臟病是在睡夢中發作,患者因此很容易一覺不醒。
徐醫生︰人在睡覺時,心跳和血壓比較平穩,在睡夢中心髒病發作的情況較少見。
一個人在一天裡面,睡眠時間佔30%,大部份時間醒著,這也是心臟病在睡夢中發作幾率較低的原故。心臟病發作最常見的時間是在早晨起床後到上午10時的一段時間。上午6時至10時最常見。

CANCER CELLS FEED ON:

a. Sugar is a cancer-feeder. By cutting off sugar it cuts off one important food supply to the cancer cells. Sugar substitutes like NutraSweet, Equal,Spoonful, etc are made with Aspartame and it is harmful. A better natural substitute would be Manuka honey or molasses but only in very small amounts. Table salt has a chemical added to make it white in color. Better alternative is Bragg's aminos or sea salt.
糖是癌的食物,若不食糖即刪除癌細胞很重要的一項食物供給。代糖如Nutra sweet, Equal spoonful等均是由 Aspartame 組合而成的,是有害的。較好之天然代糖是 Manuka糖漿或Molasses 糖蜜,但祇能取用少許。食鹽為使顏色變白而?有化學添加物,較妥之選擇是海鹽。

b. Milk causes the body to produce mucus, especially in the gastro-intestinal tract. Cancer feeds on mucus. By cutting off milk and substituting with unsweetened soya milk cancer cells are being starved.
牛奶會使人體產生黏液,尤其是在胃腸道內,而黏液正是癌症之食物。因而阻絕牛奶及採用不甜之豆漿作替代,癌症就會在無食物情況下萎縮的。

c. Cancer cells thrive in an acid environment. A meat-based diet is acidic and it is best to eat fish, and a little chicken rather than beef or pork. Meat also contains livestock antibiotics, growth hormones and parasites, which are all harmful, especially to people with cancer.
癌細胞是在酸性環境中繁衍的,以肉為基本飲食的體質是酸性的,因而食用魚類及少量雞肉是較食用牛、豬為妥的。且肉品均含有家畜抗生素、生長賀爾蒙及寄生蟲等,而這些均是對人體的有害物質,尤其是對癌症病患。

d. A diet made of 80% fresh vegetables and juice, whole grains,seeds, nuts and a little fruits help put the body into an alkaline environment. . About 20% can be from cooked food including beans. Fresh vegetable juices provide live enzymes that are easily absorbed and reach down to cellular levels within 15 minutes to nourish and enhance growth of healthy cells. To obtain live enzymes for building healthy cells try and drink fresh vegetable juice (most vegetables including bean sprouts)and eat some raw vegetables 2 or 3 times a day. Enzymes are destroyed at temperatures of 104 degrees F (40  degrees C).

e. Avoid coffee, tea, and chocolate, which have high caffeine.Green tea is a better alternative and has cancer-fighting properties. Water-best to drink purified water, or filtered, to avoid known toxins and heavy metals in tap water. Distilled water is acidic, avoid it.
飲料必須避免飲用咖啡、茶、巧克力因上述飲料含咖啡因,綠茶是較佳之選擇因為其有抗癌特性。而平常應飲用淨化水或過濾水,然應避免飲用有毒的或重金屬的水。

12. Meat protein is difficult to digest and requires a lot of digestive enzymes. Undigested meat remaining in the intestines become putrefied and leads to more toxic buildup.

Dioxin chemicals causes cancer, especially breast cancer.
Dioxins are highly poisonous to the cells of our bodies. Don't freeze your plastic bottles with water in them as this releases

戴奧辛之化學物質會導致癌症,尤其是乳癌。按戴奧辛對體內細胞具很高之毒性,因而千萬別將裝有水之塑膠罐放入冰箱,因為它亦會將戴奧辛釋出。

Recently, Dr.. Edward Fujimoto, Wellness Program Manager at Castle Hospital, was on a TV program to explain this health hazard. He talked about dioxins and how bad they are for us. He said that we should not be heating our food in the microwave using plastic containers.
前不久Dr. Edward Fujimoto在電視節目中談到健康之風險,他就強調戴奧辛對健康是多麼有害,因而請千萬不要用塑膠容器放入微波爐加熱食物。

This especially applies to foods that contain fat. He said that the combination of fat, high heat, and plastics releases dioxin into the food and ultimately into the cells of the body. Instead, he recommends using glass, such as Corning Ware, Pyrex or ceramic containers for heating food. You get the same results, only without the dioxin. So such things as TV dinners, instant ramen and soups, etc., should be removed from the container and heated in something else.
這尤其是指含有脂肪之食物,當脂肪與高溫與塑膠結合時,塑膠即會釋放出戴奧辛並進入食物中,最終就進入體內之細胞。因而他建議使用玻璃器皿作為加熱食物用,因為它一樣可使食物變熱,然卻少了戴奧辛。

Paper isn't bad but you don't know what is in the paper. It's just safer to use tempered glass, Corning Ware, etc. He reminded us that a while ago some of the fast food restaurants moved away from the foam containers to paper. The dioxin problem is one of the reasons.
紙是不錯的容器,然你無法瞭解紙裡到底含有什麼物質,因而較安全之容器是冶煉過的玻璃器皿,如康寧器皿等等。他提醒為何前不久速食店將泡沫塑料容器改為紙容器,其中戴奧辛就是問題之一

Also, he pointed out that plastic wrap, such as Saran, is just as dangerous when placed over foods to be cooked in the microwave. As the food is nuked, the high heat causes poisonous toxins to actually melt out of the plastic wrap and drip into the food. Cover food with a paper towel instead.
同時他亦指出塑膠袋;如Saran耐熱塑膠袋用於包裝食物,在微波爐加熱時亦是非常危險的,因為當食物用微波爐加熱時,高溫會讓毒素由塑膠袋溶解出來進入食物內,所以應用紙包裹食物作替代。

Information falsely attributed to Johns Hopkins called, "CANCER UPDATE FROM JOHN HOPKINS" describes properties of cancer cells and suggests ways of preventing cancer.  Johns Hopkins did not publish the information, which often is an email attachment, nor do we endorse its contents.  The email also contains an incorrect spelling of our institution as "John" Hopkins; whereas, the correct spelling is "Johns" Hopkins. For more information about cancer, please read the information on our web site or visit the National Cancer Institute's web site at www.cancer.gov.  Please help combat the spread of this hoax by letting others know of this statement.

Another hoax email that has been circulating since 2004 regarding plastic containers, bottles, wrap claiming that heat releases dioxins which cause cancer also was not published by Johns Hopkins.  More information from the Johns Hopkins Bloomberg School of Public Health.

The Truth about the “Cancer Update” Email

It has become such a problem, that the National Cancer Institute, American Cancer Society, and individual cancer centers like the Johns Hopkins Kimmel Cancer Center have posted warnings on their Web sites. Emails offering easy remedies for avoiding and curing cancer are the latest Web-influenced trend. To gain credibility, the anonymous authors falsely attribute their work to respected research institutions like Johns Hopkins. This is the case with the so-called “Cancer Update from Johns Hopkins.”

The gist of this viral email is that cancer therapies of surgery, chemotherapy, and radiation therapy do not work against the disease and people should instead choose a variety of dietary strategies. 

Traditional therapies, such as surgery, chemotherapy, and radiation therapy, work. The evidence is the millions of cancer survivors in the United States today who are alive because of these therapies.   We recognize that treatments don’t work in every patient, or sometimes work for awhile and then stop working, and there are some cancers that are more difficult to cure than others. These problems are the focus of ongoing cancer research. 

We’ll go through each statement in the email hoax and provide real responses from Johns Hopkins Kimmel Cancer Center experts.

Email hoax contentions #1 and 2: Everyone Has Cancer Cells

Cancer is a genetic disease resulting from a variety of mutations and alterations either inherited from our parents or, more commonly, acquired over time due to environmental exposures and behaviors, such as smoking and poor diet. These alterations turn off important cell growth regulators allowing cells to continually divide unchecked, explains Luis Diaz, a clinician-scientist in Ludwig Center for Cancer Genetics. This type of cell is called a malignant or cancer cell.  Among the trillions of cells in the human body, inevitably everyone has some abnormal or atypical cells that possess some of the characteristics of cancer cells, most resolve themselves and never result in cancer, says Diaz. 

There is no single or standard test for cancer. There are ways to screen for certain cancers with tests such as colonoscopy for colon cancer, mammography for breast cancer, PSA for prostate cancer, and the Pap smear for cervical cancer, and these tests can detect cancers in a very early and curable stage.  For many cancers, there currently are no screening tests, and they are diagnosed when they begin to cause symptoms.

Diaz and other Kimmel Cancer Center researchers are working on new tests that detect abnormal DNA shed by cancer cells into blood and body fluids and have the ability to find cancers before they cause any symptoms.  Approaches like this could lead to a broad-based screening test for cancer.

Tests like these also are being used to detect cancer recurrences and malignant cells left behind following surgery, and can find cancers that are not detectable under the microscope or in x-rays.

Other researchers are studying cancer stem cells.  They are stealth cells that make up just a tiny fraction of a tumor.  While small in number, investigators believe they may be the cells that drive certain cancers and lead to cancer recurrence. Therapies that target these cells are now being tested in clinical trials.

A team of our breast cancer researchers has developed a method that could make it possible to detect breast cancer from the DNA contained in a single drop of blood.

But, while evasive cancer cells are a challenge and the focus of ongoing research, it does not mean, as the email contends, that all patients, even those treated successfully for cancer, have cancers-in-waiting—undetectable but still there.  People are treated and completely cured of cancer everyday.

Email hoax contention #3:  A Strong Immune System Destroys Cancer

When it comes to cancer and the immune system, it is not a matter of strong or weak as the fictional report contends, but rather an issue of recognition.  The immune system simply does not recognize cancer. In its complexity, the cancer cell has learned to disguise itself to the immune system as a normal cell.  Infected cells send out danger signals setting the immune system in action.  Cancer cells do not, explains Elizabeth Jaffe, co-director of cancer immunology and leading expert on cancer and the immune system.  By deciphering the methods cancer cells use to make them invisible to the immune system, Jaffee and team have developed cancer vaccines that have successfully triggered immune reactions against prostate cancer, pancreatic cancer, leukemia, and multiple myeloma.

Dietary habits and lifestyle choices, such as smoking, contribute to the development of many human cancers, says Kimmel Cancer Center director William Nelson. Our experts recommend a balanced diet (see response #11) as a way of reducing cancer risk.  In terms of supplements, Nelson points out that while they may help mediate vitamin deficiencies, taking doses above what the body needs provides no added benefit.

Chemotherapy and radiation therapy kills cancer cells with remarkable selectivity, says Nelson.  There are some temporary and reversible side effects common to cancer therapies, including hair loss and low blood counts.  Limiting and managing these side effects is an integral part of treatment.

Surgery is the first line of treatment for many types of cancer. It does not cause cancer to spread. Cancers spread to other tissues and organs as a tumor progresses and cancer cells break away from the original tumor and travel through the bloodstream to other body sites.

Email hoax contentions #11, 12, 13, and 14:  Cancers Feed on Certain Foods

The premise is that cancer cells feed on certain foods, and if a person refrains from eating these foods, the cancer will die. According to our experts, a poor diet and obesity associated with a poor diet is a risk factor for the development of cancer.  However, there is no evidence that certain foods alter the environment of an existing cancer, at the cellular level, and cause it to either die or grow.

While there is such a thing as tumors that produce mucus, the mucus made by a tumor does not result from drinking milk.  And, eating less meat, while a good choice for cancer prevention, does not free up enzymes to attack cancer cells, explains cancer prevention and control expert Elizabeth Platz.

Moderation is key, says Platz. As part of a balanced diet, sugar, salt, milk, coffee, tea, meat, and chocolate—the foods the “Update” calls into question—are all safe choices, she says.  The real concern with many of these, particularly sugar, is that it adds calories to a diet and can lead to obesity, and obesity is a major risk factor for cancer. A balanced nutritious diet, healthy weight, physical activity, and avoiding alcoholic drinks may prevent as many as 1/3 of all cancers. Platz recommends eating at least five servings of fruits and vegetables per day and limiting red and processed meats, like hot dogs.

Several Johns Hopkins experts participated in the World Cancer Research Fund – American Institute for Cancer Research report Food, Nutrition, Physical Activity, and the Prevention of Cancer:  A Global Perspective, published in November 2007, which is considered by cancer prevention experts to be an authoritative source of information on diet, physical activity and cancer.  Their recommendations for cancer prevention and for good health in general are:
1. Be as lean as possible without becoming underweight.
2. Be physically active for at least 30 minutes every day.
3. Avoid sugary drinks. Limit consumption of energy-dense foods (particularly processed foods high in added sugar, or low in fiber, or high in fat).
4. Eat more of a variety of vegetables, fruits, whole grains and legumes such as beans.
5. Limit consumption of red meats (such as beef, pork and lamb) and avoid processed meats.
6. If consumed at all, limit alcoholic drinks to 2 for men and 1 for women a day.
7. Limit consumption of salty foods and foods processed with salt (sodium).
8. Don't use supplements to protect against cancer.
Our experts recommend that people meet their nutritional needs through their food choices.  While vitamin supplements can be helpful in people with nutritional deficiencies, evidence suggests that supplementation above what the body can use provides no added health benefit. 

Email hoax contention #15:  Cancer is a Disease of Mind, Body, and Spirit

Cancer is a disease caused by genetic alterations.  Many times, these alterations occur through our own behaviors—cigarette smoking, a poor and unbalanced diet, virus exposures, and sunburns, says cancer prevention and control expert John Groopman.

How stress, faith, and other factors influence this is largely unknown.  We would like people to be happy, loving, and stress free, simply because it is a nice way to live and can contribute to an overall feeling of well being, says Platz.  There is no evidence, however, that a person prevents or causes cancer based on his or her state of mind.

Still, we understand that a cancer diagnosis can make patients and families feel stressed and anxious, and these are not pleasant feelings.  So, we offer extensive patient and family services, including a cancer counseling center, pain and palliative care program, chaplain services and a meditation chapel, an image recovery center, and the Art of Healing art and music program.

Email hoax contention #16: Oxygen Kills Cancer Cells

Platz recommends regular exercise as a part of any healthy lifestyle, but says there is no evidence that breathing deeply or receiving oxygen therapy prevents cancer.

On its Web site, the American Cancer Society includes the following statement about oxygen therapy, “Available scientific evidence does not support claims that putting oxygen-releasing chemicals into a person's body is effective in treating cancer. It may even be dangerous. There have been reports of patient deaths from this method.”  Read more

  中評社香港12月1日電/很人都相信維生素D和鈣有助抗擊癌症、心臟病和其他一些疾病,但是根據聯合早報網報道,美國和加拿大醫生指出,這兩種補充劑的唯一確定好處,就是有益骨骼健康。

美加研究人員複查1000項有關低維生素D水平和嚴重疾病風險關係的研究,結果發現一些研究結果不一致,其中一些是研究方法不嚴謹的緣故。

參與此次研究的美加專家也首次發布了適合北美的新準則,他們建議人們每天補充700-1300毫克的鈣以及600—800國際單位的維生素D。

美國醫學研究所14人委員會成員、加拿大醫生瓊斯說,大多數人“並不缺乏維生素D,這是我們要傳達的第一個信息。我們認為人們對缺乏維生素D的擔憂被擴大了,其實在北美洲,維生素D缺乏的人非常少。”

他還說,只要飲食均衡和在冬天服用一些維生素補充劑,加上多曬太陽提高維生素D的水平,多數北美人都應該能夠滿足建議的份額。

專家也指出,有些人可能需要較多維生素D,比如母乳喂養嬰兒、膚色較深的人和生活在北緯度地區日照較少的人。

在提出這最新結論的同時,這些美加研究人員也表示,他們沒有完全排除維生素D補充劑可能帶來的益處,他們也沒有完全否定其他維生素D補充劑研究指出的好處。

食物酸鹼配搭關係人體健康

 不只土壤有pH值,護膚品有pH值,就連我們的食物和體內的血液也有pH值。pH值是物體酸鹼度的指標,所以又可稱為酸鹼值。近年互聯網上廣泛流傳一些電郵及文章,內容指出吃太多酸性食物會令我們的血液酸化,造成酸性體質,令身體容易出現各種毛病,包括癌症。這些都是提倡酸性體質概念人士的理論,但醫學界對此說法還未有定案。

人體有酸鹼緩衝系統

其實,人體血液正常的pH值是7.4,同時可以在最低的7.35和最高7.45之間浮動。一旦低於7.35或高於7.45,就會引致嚴重的健康問題。不過,人體本身有良好的酸鹼緩衝系統,使體液和血液保持恆定的酸鹼值,緩衝食物酸鹼度對身體造成的影響。只要我們酸鹼緩衝系統發揮正常,食物的酸鹼其實對身體影響非常小。除非一次性攝入大量過酸或過鹼的食物,才會引起血液或體液的pH值變化。

味道酸不等於屬酸性食物

食物大致上可分為酸性和鹼性。分辨酸鹼食物不是靠味蕾,而是以腸胃消化代謝的過程來分別。在人體內經過消化和代謝,其最終產物呈鹼性的食物,就是鹼性食物。在體內的最終代謝物呈酸性的食物,就是酸性食物。一般來說,含鉀、鎂、鈣等礦物質較多的食物是鹼性食物,含磷、硫等較多的食物,是酸性食物。要注意的是,酸性食物的味道不一定是酸的。

鹼性食物可提供鈣、鎂、鉀、鈉等無機鹽,還可提供人體所需的各種營養,如維他命、微量元素與膳食纖維,可促進腸道蠕動、防止便秘、降低血液膽固醇等,更重要的是有助減少腸道致癌物及有毒物質的吸收,對人體健康非常重要。但醫學人士普遍相信,無論偏重吃鹼性或酸性食物,都會導致營養不均衡,對身體造成傷害,因此,我們不能以酸鹼值來斷定食物的好壞,相反,最重要是保持酸鹼度平衡,並奉行少肉多菜的原則,不要過分偏食。

由於亞裔人士常吃的食物以米麥五穀及肉類為主,可能造成「重酸輕鹼」,所以適宜添加鹼性食物,以作平衡。

認識酸鹼食物 吃得更健康

大部分水果和蔬菜都屬鹼性食物,至於穀物類、肉類、蛋類、魚類及海鮮均屬酸性食物。要注意的是,強酸性食物不宜吃過量。

強鹼性食物

葡萄、茶葉、黃瓜、紅蘿蔔

中鹼性食物

黃豆、番茄、香蕉、士多啤梨、蛋白、西蘭花、菠菜

弱鹼性食物

西芹、四季豆、蘋果、豆腐、馬鈴薯、洋?

強酸性食物

蛋黃、乳酪、用白糖製成的高糖分甜品、金槍魚、比目魚、動物內臟

中酸性食物

火腿、煙肉、雞肉、豬肉、牛肉、鰻魚、小麥、麵包

弱酸性食物

白米、花生、啤酒、巧克力、三文魚、龍蝦、銀鱈魚

水果和蔬菜多為鹼性食物,但亦有報告指梅子和李子內含的有機酸屬於人體不能代謝的aromatic acid,在人體內會呈酸性反應,所以是酸性食品。


 

另類療法有效嗎?談鯊魚軟骨

鯊魚軟骨是近幾年來在台灣民間流傳的偏方之一。由於業者根據鯊魚甚少或從未得到癌症的事實,而推測在鯊魚軟骨之中必定含有某種抗癌之物質,因而大肆鼓吹鯊魚軟骨具有抗癌之功效,然而卻一直未有嚴謹的臨床試驗證實其論點。而鯊魚軟骨到底能不能抗癌?在1997年美國臨床腫瘤學會年會中,Miller醫師就此提出了首篇嚴謹的臨床試驗報告。作者選擇各類癌症病患共58人,其中包括乳癌15人、大腸癌15人、肺癌14人、攝護腺癌8人、淋巴癌3人、腦瘤1人、及原發部位不明之轉移癌2人。這些病人必須確定癌症之診斷,且經傳統療法治療後無效,並且有可評估療效的病灶,預估存活期在12週以上,且身體之一般狀況良好。治療方式為每日三次,每次口服每公斤體重一公克的鯊魚軟骨製劑。評估腫瘤大小在治療後是否有變化,並評估患者治療後的生活品質是否有改善。結果在可評估療效的47名患者中,並沒有任何一位患者達到完全緩解或部份緩解,亦即鯊魚軟骨並無可見之抗癌療效,而且患者治療後的生活品質也未見顯著的改善。

結論是任何一種抗癌藥物都必須經過嚴謹的臨床試驗證實其療效,並確定其毒性後,方可給予病患使用。無論是業者或病患都不應該對未經證實療效的偏方加以誇大宣傳。癌症病患及其家屬在發現自己或家人罹患癌症時,應盡快找合格的醫師並接受正規治療,千萬不可諱疾忌醫,迷信偏方,以免錯失治療的良機。癌症只要早期發現,早期接受正規治療,還是有很高的機會可以治癒的。

 近日網上流傳甚廣的一篇文章,

下午參加了一場小型國際研討會,其中有一位目前在美國癌症中心的戴博士以 "Is Cancer Curable?" (癌症是否能治癒?)為題,分享了他對癌細胞生長動力學的研究結果。

癌症最令人害怕的就是 metastasis(轉移)。原生癌並不會讓病人死亡,然而一旦癌細胞轉移,它們在其它組織器官內的興風作浪就讓病人逐漸(或是很快速)的走向死亡。

但是,為什麼有些癌細胞已轉移的病人卻未繼續惡化? 日本曾解剖研究了幾十位無病痛往生的 90-103歲老人,發現他們每一位體內都有不少的癌細胞。但是,為什麼他們的癌細胞沒有造成身體的病痛?

戴博士和幾位癌症研究學者發現,癌細胞在活躍一段時間後會進入「休眠期」,休眠一段時間後又再度活躍,興風作浪。「休眠期」越長,病人能存活的時間就 越長,甚至不發生令人害怕的「轉移」。

現在醫學界積極的在研究拖延癌細胞「休眠期」的方法,包括利用藥物和飲食。「有效預防細胞癌化」那篇中提到的幾種天然物可藉由控制癌細胞內訊息傳導(signal transduction)的路徑來讓癌細胞進入 「休眠期」。

所以我把它們再次列出,請大家多吃含有這些有效成份的食物,讓身體內蠢蠢欲動的癌細胞多多睡覺。

1. 咖哩的重要成份「薑黃」(抗癌成份是「薑黃素」)

抗癌或致癌的成分, 除了經過一次又一次的科學實証證明之外, 「劑量」及「頻次」也扮演著重要的角色, 所以這些抗癌成分, 除了經科學實驗證實之外, 每天的需要量也十分重要, 比如說假使一天的需要量, 得要100公斤的某種蔬菜才能提煉純化得到, 那樣假使不以科學方法萃取, 一般人無論怎麼努力, 都無法達到有效劑量

以上所提只能說這只是抗癌機制的方法其中之一,日本人曾對數種中藥藥方劑如四君子湯,六君子湯,四物湯,補中益氣湯,八珍湯,人參養榮湯,溫清飲,十全大補湯等來研究癌症抗轉移作用,結果發現四物湯,八珍湯,溫清飲,十全大補湯有不錯的效果.特別的是這些方劑都有四物湯的組成,故而推測四物湯可能具有癌症抗轉移作用.

但也考慮若非在西醫放療或化療控制癌細胞的情況之下,使用四物組成的方劑也是有一定的風險,因癌細胞可能藉由補血而大量攝取到營養,故較適宜在放療或化療後做輔助療法,除可可以減輕化療的傷害,恢復骨髓造血功能外也可到上述的抗轉移作用。

解牛奶致癌之謎

【明報專訊】問﹕據聞某些奶農會替乳牛注射可增加奶量的荷爾蒙,牠們所產的牛奶會否影響健康,例如患癌?

答﹕該種荷爾蒙稱為「重組牛類生長激素」(recombinant bovine growth hormone,簡稱rBGH,或recombinant bovine somatotropin,簡稱rBST),是人工合成荷爾蒙。香港營養師協會會長林思為稱,美國    政府准許使用,但在加拿大    、 澳洲    、 新西蘭    及日本    則禁用。注射後,牛隻體內另一種名為insulin-like growth factor(簡稱IGF-1)的荷爾蒙會上升。

乳癌    患者IGF-1水平高

蘇州大學醫學院的學者綜觀現有的研究後指出,飲用牛奶或會令人體內IGF-1水平上升;另外,美國耶魯大學    醫學院2002年針對中國乳癌患者的研究發現,與一般婦女比較,乳癌患者體內的IGF-1水平較高。但林思為指出,不能因此認定喝牛奶會致癌,當中還有疑團未解。據美國癌症學會網站指出,暫時未有研究直接比較一般牛奶與經rBGH注射所產牛奶的IGF-1水平有何分別,而且IGF-1水平上升,亦見於喝豆奶的人,懷疑箇中關鍵未必關乎rBGH,而是當中的蛋白質    或其他成分。

「恐怕是動物蛋白」 出事

問﹕有謂牛奶蛋白會致癌,喝牛奶豈不是會致癌?

答﹕兒科專科醫生梁淑芳稱,不是說喝一口牛奶便生癌,而是大量攝取牛奶蛋白以至動物蛋白與癌症有關。此說法來自康奈爾大學營養生物化學榮休講座教授T. Colin Campbell所做的動物實驗,老鼠事先接觸致癌物黃麯黴素,之後再分別以牛奶蛋白及植物蛋白餵食,結果攝取前者的老鼠較後者多患癌。她又稱,癌症的形成關乎很多因素,包括環境中眾多已知或未知的致癌物,但加上什麼因素會促使癌症出現?該實驗便提出「恐怕是動物蛋白」的論點。

不過,衛生署    中央健康教育組營養師胡燕柵指出,動物實驗結果未必可以直接套用在人類身上,該實驗又只以牛奶蛋白餵給老鼠,與人類每天攝取不同蛋白質來源的實際情况有別。

熟透的黑香蕉可抗癌?

根據日本科學家的研究發現,香蕉中具有抗癌作用的物質 TNF。

而且,香蕉愈成熟其抗癌效果愈高。日本東京大學教授山崎正利利用動物試驗,比較了香蕉、葡萄、蘋果、西瓜、菠蘿、梨子、柿子等多種水果的免疫活性,結果證實其中以香蕉的效果最好,能夠增加白血球,改善免疫系統的功能,還會產生攻擊異常細胞的物質 TNF 。

山崎教授的試驗也發現, 香蕉愈成熟即表皮上黑斑愈多,它的免疫活性也就愈高。所以從現在開始要吃熟一點的香蕉唷! 香蕉不會使白血球盲目增長只有在數量少的時候才會大幅度增加。

因此,專家們研究認為,香蕉具有的免疫激活作用比較溫和 , 在人體狀態健康時並不會使免疫力異常升高 . 但對病人、老人和抵抗力差的體弱者則很有效果。

因此,在日常生活中,我們不妨每天吃1~2根香蕉,透過提升身體的抗病能力來預防感染,特別是預防感冒和流感等病毒的侵襲。山崎 教授指出,在黃色表皮上出現黑色斑點的香蕉,其增加白血球的能力……… 要比表皮發青綠的香蕉強8倍..

至於山崎教授的研究,也不是胡亂吹牛的,山崎正利是日本帝京大學藥學部教授,他所做的實驗,是用廿隻白老鼠分分成各十隻的兩群做對照,一組注射水當對照組,一組注射香蕉萃取液。結果,是對照組全死;實驗組則有三隻存活。

由於山崎教授的實驗,香蕉抗癌在日本的確是一個很流行的說法,在日本網站很容易就可以找到一堆,引用的資料都是山崎的說法。

至於網路流傳的中文資料,幾乎都是一樣,來自新華社的一篇關於日本的報導。

不過,值得討論的是,新華社報導中說的TNF。有的中文資料中,將TNF翻成是三硝基芴酮,這是不對的。三硝基芴酮是中國取的名字,是種具爆炸性的黃色結晶化學藥品。請參考下列中國「國家標準 危險貨物品表」網站。

正確的說,山崎實驗裡的TNF,應該是TNF-α (Tumor Necrosis Factor – Alpha)。
至於TNF-α (Tumor Necrosis Factor – Alpha),或可譯為「腫瘤壞死因子-Alpha」。關於TNF-α的細胞機轉,其實是一門大學問。TNF-α和發炎、過敏等免疫系統的反應,及因免疫系統而引發的疾病有很大的關係。

上找到,這是DE Hallahan 、S Virudachalam 、J Kuchibhotla 、DW Kufe 、RR Weichselbaum五位教授在1994年的這一篇論文。他們利用TNF-α來縮小基因療法的範圍,以避免類似傳統基因療法「好壞通殺」的缺點。

總結來說,這篇轉寄信並不全是謠言,不過對於香蕉抗癌的功效,仍然需要更多的實驗報告來證明。在此之前,我們只能說:多吃水果總是好的,不是嗎?

癌的啟示:咖啡會致癌嗎?

 

如果你喜愛悠閒地坐在柔軟的梳化上飲咖啡和用手機「煲粥」,致癌風險最高的是哪一樣生活模式呢?手機?咖啡?

其實可能是你坐得太久,尤其是你平日已少做運動的話。最近就有研究指大部分時間都坐着工作的僱員,患腸癌的機會較經常要走動的為高。

世界衞生組織最近將流動電話列入「有可能」致癌類別,但很多科研人員都反駁,指目前並沒有真憑實據確定手機的輻射會增加腦癌的風險。世衞報告的精髓是在「有可能」三個字,即默認這推論尚未被證實。不過,如果你是「寧可信其有」的人,「藍牙」耳機也是一個不錯的選擇。

其實,比手機更早列在世衞「有可能」致癌級別的,還包括咖啡!

醫學界對咖啡會否致癌的問題,多年前已展開研究,綜合了數十個研究的數據,世界癌病研究基金在2007年發表報告,指咖啡並不會增加患胰臟癌、腎癌等的風險。

今年五月瑞典的研究報告更表示,咖啡不會增患乳癌風險,相反,如每天飲五杯咖啡以上,還可能減患乳癌的機會。

巧合地,兩星期後美國哈佛大學也發表研究,指咖啡可減低患前列腺癌風險,但每天也是要飲五杯以上才有明顯效果!

我絕不建議你為了防癌而每天飲五杯以上咖啡,一來,這些觀察性數據都需進一步深入研究才可確定;二來,過多咖啡(尤其加糖和奶)亦會引致其他健康問題。若你本身喜愛每天飲一、兩杯咖啡,請繼續享用,不用被世衞的致癌清單嚇怕。
